Hunyuan potato jelly
Hunyuan liangfen potato jelly in hot sauce, is one of the favorite dishes of residents in Hunyuan county, Datong city, in Shanxi province, according to local admirers. The cold dish uses potato starch as its raw material, adds an appropriate amount of alum, stirs it into a paste, rolls it on the fire and pours it out before it finally cools off. Compared with liangfen made of mung bean in other places, Hunyuan liangfen is unique in its seasoning. In addition to common vinegar, scallion, cucumber shreds and radish slices, Hunyuan liangfen also has tofu, fried broad beans and specially made chili oil sauce as a supplement.

Shanxi Fried cake (Yougao)
Shanxi Fried cake (Yougao) is one of the most representative local snacks in Shanxi. It is made from millet millet and jujube. Fried cakes with sweet fillings, like bean or date paste, are quite popular in Jinzhong city. The oil cake is golden in color, delicate and soft, long-lasting without discoloration and deterioration, it is a natural green food. Locals usually enjoy the snack during traditional Chinese festivals, weddings or birthdays. Most hotels in Shanxi  are sold as local flavors.

Famous in Shanxi, Henan and Shaanxi provinces, the Jishan fried dough twist is a traditional-flavored snack originating from Jishan county in Yuncheng city, located in the southern part of North China's Shanxi province. 
Jishan fried dough twists, with sweet and salty flavors, have a golden color -- with a crisp, oily but not greasy taste. Over a long period time, they have developed into dozens of varieties and shapes and have a shelf life as along as nine months.
